The mountains provide a very stable, humid microclimate. Combined with limestone in the soil and high altitude, we find this giving coffee a syrupy body and plenty of citric acidity. This farm is owned by the Vides family and is situated in La Libertad. It’s nicknamed La Bolsa for the topography. Their washed coffees here are RFA certified, and organically produced. \u003c\/span\u003e\u003cbr\u003e\u003cbr\u003e\u003cspan\u003eIn this part of the farm’s produce, coffee is fermented for between 18 and 24 hours inside its cherry without water in contact. Following that, the cherry is removed, seeds are cleaned of remaining mucilage, and are then passed through a filter system of channels, before being soaked in well-maintained tanks overnight.\u003c\/span\u003e\u003cbr\u003e\u003cbr\u003e\u003cspan\u003eAll of the seeds are then dried under the sun to around 10.5% prior to hulling. Its sweetness is impressive. The coffee arrived after a public tasting with the Colombian coffee champion at our shop in Alicante, who left us a sample of this wonderful coffee, grown at 1720 meters above sea level.\u003c\/p\u003e\n\u003cp\u003eThe Papayo variety is rare, and this is our first coffee to include it. It's processed in a sequence that begins with harvesting the cherries at their optimal ripeness. The beans then undergo oxidation in the cherry for 48 hours. Afterward, they are lightly pulped and left with the mucilage but without the cherry skin for another 88 hours in sealed cans. Finally, the coffee is washed and slowly dried for 15 days. The processing is a wet aerobic fermentation in ceramic tanks, using only perfectly ripe ombligon variety beans for the washing method. As a result we see huge uniformity in the coffee harvest and cup profile from one cup to the next.\u003c\/p\u003e\n\u003cp\u003eIt’s rare to see the ombligon variety but it features an impressive and evident sweetness paired with clear acidity and low level bitterness at our roasting degree.
