Its sweetness is impressive. The coffee arrived after a public tasting with the Colombian coffee champion at our shop in Alicante, who left us a sample of this wonderful coffee, grown at 1720 meters above sea level.\u003c\/p\u003e\n\u003cp\u003eThe Papayo variety is rare, and this is our first coffee to include it. It's processed in a sequence that begins with harvesting the cherries at their optimal ripeness. The beans then undergo oxidation in the cherry for 48 hours. Afterward, they are lightly pulped and left with the mucilage but without the cherry skin for another 88 hours in sealed cans. Finally, the coffee is washed and slowly dried for 15 days.
