This coffee comes from Grupo Guaxupe, based in Minas Gerais. The region has a well reputed specialty coffee production, and a certification of protected denomination for coffee production at high environmental and social standards.
The area is well known for distinctly nutty, chocolatey profile coffees. This lot came to us with a reminder of pecan pie and a touch of dark chocolate, and overjoyed us with its amazing balance in espresso. Sul de Minas soil provides a diverse nutrient base for the growth of a wide range of varieties, and that is how we ensure a uniform and well-matured production from farms there. The process is aerobic drying with a honey process for the cherries, which means a less obvious acidity and improves the sweetness and body, without heavy bitterness.
