Decaf Panela - Swiss Water Process - Colombia

Our panela decaf is from Risaralda and Huila in Colombia, from 2 producer groups Cafisur & CadefiHuila It is a blend of varieties to add complexity to its profile. The farms we have blended from for this lot have extremely fertile soil and a favourable amount of rainfall, making for healthy growth of caturra, castillo and bourbon varieties each year. 

Swiss Water decaffeination then uses supersaturated water to extract caffeine from our green coffee, trapping it in carbon filters and circulating other matter back into the green coffee and water. Caffeine and the carbon filters are then burned for clean energy to power the next cycles of decaffeination to be done. This coffee arrives in humectant GrainPro bags of 60kg to ensure that the quality of the cup is stable; the material means no contaminants, no changes in humidity level and buffers against significant in dry seed temperature shocks.
